Baking with Amelia Bedelia

Lately, H-man (age 7) has been super into the shenanigans of Amelia Bedelia. Her overly-literal interpretation of everything gets him rolling every time. One of his most recent reads was Amelia Bedelia Bakes Off. Grab a copy at that affiliate link and I would be most appreciative!

At the end of the book, there’s a recipe for chocolate cake and H-man immediately wanted to make it. A quick glance told me it was pretty simple and that we had all the ingredients on hand. This particular recipe is for a “Crazy” or “Whacky” cake. These are cakes that use baking soda and vinegar for volume, with no milk, eggs, or butter. This type of cake was made popular during the Great Depression when those expensive items were hard to come by. They continued to be made regularly throughout the war years when rationing limited those ingredients. Nowadays, they’re easily adapted for vegetarians and vegans. They also are super easy to make with kids because you mix everything right in the baking pan.

Now, I can’t post the exact recipe since it’s not original to me, but a quick perusal of the interwebz will give you lots of Crazy Cake recipes. Here’s one Pinterest search. See what I mean? Lots of options!

The end result is a deliciously moist, chocolatey cake. Mixing well is key. You don’t want lumps. That’s also why sifting the dry ingredients is highly recommended. You can absolutely frost this cake with your favorite frosting, but we just sprinkled ours with powdered sugar and there were no complaints. In fact, H-man liked “all the extra sugar.”
