Cooking the Book Returns

I’m back and I’m so excited to show off my new look – thanks to the really awesome Steph at Schteff.Design! I absolutely love it and hope you do too!

I’m planning on more goodies as we forge ahead into the third year of this little project of mine. In the coming months I’ll be adding a store, revamping my Instagram, hosting some live events, and more!

And Now, to the Burger

For my long awaited return to the blogosphere, I’m going back to one of my favorite series – Bob’s Burgers. In the most recent Valentine’s Day episode, “V for Valentine-detta,” Bob’s Burger of the Day is the “Shut Up and Swiss Me Burger.” This one took some thought as I could go the easy route and do a swiss cheese and mushroom burger, but I wanted something different. As I pondered, my mind kept returning to the Swiss Almond Spread that you can get at the restaurant chain Olga’s Kitchen.

I think it’s more of a regional chain, but if you have one nearby, go there now and get an order of Snackers. Snackers are triangles of Olga’s famous Olga Bread (a bit like a pita, but sweeter and moister) that are fried and sprinkled with a spice mix. They are served with Swiss Almond Spread that the whole CtB family loves. Now, while doing my research for this post, I have found evidence that both the spice mix and the spread are easily found, store bought brands but that doesn’t change my love for either. However, it does mean that I needed to figure out how to make something from scratch that comes as close to possible to the originals.

All in all, I really enjoyed what I came up with. The Swiss Almond Spread is tasty and holds up really well to the beef patty and pretzel bun that I chose to round out this burger. You could easily use it as a lovely cheeseball. Once you’ve got it mixed, simply roll it into a ball and cover in extra slivered almonds. Bam. Party food. You’re welcome. The spice mix goes well here; cutting the richness of the cheese spread with just a slight kick. Feel free to use any patty you’d like – turkey or veggie would be a great sub for the beef. Same with the bun, use whatever makes you happy. Just promise me you’ll toast it. Toasted buns are delicious buns.

Shut Up and Swiss Me Burger

This is my interpretation of the a Burger of the Day from the television series "Bob's Burgers." The flavors are inspired by a family favorite, Snackers, from Olga's Kitchen.

Ingredients

For Swiss Almond Spread

  • 8 oz Cream Cheese, softened (I used Neufchatel.)
  • 6 oz Swiss Cheese
  • 1/2 cup Almonds, slivered
  • 1 tbsp Worcestershire Sauce

For Spice Topping

  • 2 tbsp Romano Cheese, grated (Parmesan works fine, too.)
  • 1 1/2 tsp Sesame Seeds
  • 1 tsp Paprika
  • 3/4 tsp Salt
  • 1/2 tsp Poppy Seeds
  • 1/2 tsp Celery Seeds
  • 1/4 tsp Garlic Powder
  • 1/4 tsp Black Pepper, ground
  • Optional - dash Cayenne Pepper, to taste

For Burger Assembly

  • 4 items Buns, toasted (I used pretzel.)
  • 4 patties Burgers of your choice (I used extra lean ground beef.)

Instructions

For Swiss Almond Spread

  1. Combine all spread ingredients in a food processor. Pulse to combine. Process until smooth, scraping down sides as necessary.

    This is a thick spread. If you'd like to thin it out a bit, add some Greek yogurt or milk, about a tbsp at a time, until you achieve your preferred thickness.

    This makes more then needed for four burgers. Enjoy the leftovers on toasted pita, pretzels, or crackers.

For Spice Topping

  1. Combine all topping ingredients in bowl and mix well. 

    Store leftovers in airtight containers in the refrigerator.

For Burger Assembly

  1. Once burger is on bottom bun, sprinkle spice mix on hot burger patty. Top with Swiss Almond Spread.

    Add other burger toppings as desired. Caramelized onions or finely diced shallots would be delicious, as would spicy greens.
